food can change your life

As a child I would watch my mom cook incessantly. My favorite memory was walking into the house after school to the smells wafting from the kitchen, permeating the house and trying to guess what was cookin’. Although I received my Bachelors degree in marketing and got a job in sales rather than to go to culinary school, as soon as I was on my own I started cooking for myself and subsequently, my family. Just as my mom’s cooking brought much delight to our immediate family and those who gathered around our table, I wanted to create a similar experience for my young family and friends.

My love for cooking turned into a love for baking as well. Baking a batch of homemade cookies is much healthier than buying a bag of cookies at the grocery store, right? As my family started to grow I relied on large casseroles to satiate them, not realizing at the time that the noodles, canned soups, table salt and crackers crumbled on top were not the best choice of ingredients. Over the years, I gained weight (despite daily exercise) and felt my energy diminish. Many years later I would come to realize a few important facts: you can’t out exercise your diet and ingredients matter.

a new perspective

In 2015 I told my husband that I’m hanging up the sales job and moving into the obvious role of teaching cooking classes (something I knew nothing about). Thank goodness for my good-natured husband and the internet, where I could research how exactly I was going to go about this change. In the course of my research I came across many different styles of classes but the ones that caught my attention were those that focused on health. This led me down a rabbit hole of research and participating in a 10-day detox which eliminated inflammatory foods and toxins with minimal exercise. I felt better than I had ever felt in my life! I lost a few pounds, had greater mental clarity, glowing skin, and more energy than I had for 47 years.

I couldn’t keep this a secret! I would have to incorporate this into my cooking classes. I began to read and research as much I could about whole, organic foods and humanely raised meats and the positive effects it has on our bodies. I realized that the quality of food matters and ultra processed foods are literally killing us. I went back to class and received my health coaching certification from the Institute for Integrative Nutrition. I had to spread the word that we could obtain optimal health with the right foods.
