Smoked Salmon Quinoa Bites

Ingredients:

 

  • 8 oz smoked salmon, wild and sliced 
  • 6 oz mascarpone cheese
  • 1/2 tsp dried dill
  • ¼ tsp salt
  • 1/3 cup chives
  • Cracked pepper to taste
  • Quinoa pizza crust, cut into pieces

 

Directions:

 

1. In a small bowl combine cheese, dill, and salt. 

2. Spread cheese mixture over quinoa pieces.

3. Top with a small slice of salmon. Garnish with chives and cracked pepper. 
 

Herbed Deviled Eggs

Ingredients:

 

  • 12 hard boiled eggs
  • 1/2 cup paleo mayonnaise 
  • 1 tsp sunhera masala
  • ½ tsp yellow mustard
  • Paprika or parsley flakes for garnish

 

 

Directions:

 

  1. Peel hard boiled eggs
  2. Cut eggs lengthwise and remove the yolk
  3. Place yolks in a bowl along with the mayo, herbs and mustard until creamy
  4. Spoon yolk mixture back into egg white shells
  5. Garnish and refrigerate 

Broccoli Cheese Quinoa Risotto

Ingredients:

 

  • 2 TBL olive oil 
  • 1 Cup quinoa, rinsed
  • 3 Cups chicken broth
  • ½ cup white wine
  • 1 small onion, diced
  • 2 cloves garlic, minced 
  • 2 Cups broccoli, chopped
  • 1 Cup cheddar cheese 
  • Salt and pepper to taste 

 

Directions:

 

  1. In a large skillet heat the olive oil over medium heat. Add the onion and garlic and sauté for 4 mins.
  2. Add quinoa. Stir for 3 minutes. Add the wine until it’s absorbed. (cover) Next add 1 ½ cups broth until it’s fully absorbed. (cover) Add the last 1 ½ cup broth until absorbed. (Cover)
  3. Stir in the chopped broccoli and cheese. Stir until cheese melts. Serve hot.
