Grilled Eggplant & Zucchini Rounds


1 large Eggplant, cut in 1/4″ slices
1 large Zucchini, cut in 1/4″ slices
1 pound fresh mozzarella
1/2 cup Parmesan
1 (28oz) jar of marinara
Fresh basil
Salt and pepper to taste


1. Grill the eggplant and zucchini for 5 mins on each side. Salt and pepper to taste. Remove from grill.
2. Layer the eggplant, basil, sprinkle of both cheeses, marinara, & zucchini. Repeat. Finish with a slice of eggplant & mozzarella cheese.
3. Place back on the grill until heated through and cheese melts.
