Creamy Garlic Chicken


Ingredients:

 

  • 4 chicken breasts (halved and pounded thin)
  • 8 oz portabella mushrooms
  • 1 cup spinach, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy whipping cream
  • 1/2 cup chicken broth
  • 3/4 cup Parmesan cheese
  • 1 1/2 tsp Italian seasoning

Directions:

 

  1. Pound chicken thin. Sauté until no longer pink. Remove. Sauté mushrooms. Remove. Add garlic and sauté for one minute. Add cream, chicken broth, Parmesan cheese, & Italian seasoning and bring to a boil. Reduce heat. Add chicken, spinach and mushrooms and let simmer 10 minutes.
  2. Serve over cauliflower mash (roasted cauliflower,  1 TBL butter, clove garlic and salt to taste. Pulse 10 times in food processor until blended & chunky.)
