Creamy Garlic Chicken


Creamy Garlic Chicken
4 chicken breasts (halved and pounded thin)
8 oz portabella mushrooms
1 cup spinach, chopped
2 cloves garlic, minced
1 cup heavy whipping cream
1/2 cup chicken broth
3/4 cup Parmesan cheese
1 1/2 tsp Italian seasoning

Pound chicken thin. Sauté until no longer pink. Remove. Sauté mushrooms. Remove. Add garlic and sauté for one minute. Add cream, chicken broth, Parmesan cheese, & Italian seasoning and bring to a boil. Reduce heat. Add chicken, spinach and mushrooms and let simmer 10 minutes.

Serve over cauliflower mash (roasted cauliflower,  1 TBL butter, clove garlic and salt to taste. Pulse 10 times in food processor until blended & chunky.)
