Cowboy Caviar

The perfect summer (or any time of year!) side salad. 

Cowboy Caviar
1 can black beans, drained & rinsed
1 can salad beans, drained & rinsed
3 cups corn, cooked
2 red peppers, diced
2 jalapeños, seeded & diced
1 cup cilantro, chopped
1 small red onion, diced
2 cloves garlic, minced


Dressing:
2/3 cup avocado oil
1/3 cup white wine vinegar
2 tsp cumin
2 tsp oregano
1 tsp salt
1/2 tsp pepper


Mix all together. Refrigerate a few hours before serving.
