Bang Bang Shrimp

Bang Bang Shrimp with Slaw

1 pound shrimp
1/8 cup tapioca flour


Bang Bang Sauce:
1/3 cup homemade mayo
Sweet chili sauce
2 Tablespoons sriracha

Sweet Chili Sauce:
3 ½ Tablespoons white wine vinegar
2 Tablespoons water
1 ½ Tablespoons honey
1 clove, minced garlic
1 teaspoon chili flakes
½ teaspoon minced ginger
1/8 teaspoon cayenne
pinch of salt

Slaw topping:
1 ½ cups red cabbage, shredded
½ cup cilantro
1 leek, sliced
1 Tablespoon avocado oil
2 Tablespoons white wine vinegar
1 Tablespoon honey
pinch of salt


Directions:
1. Sweet chili sauce: Combine all ingredients in a small saucepan. Bring to a boil and let simmer 10 minutes. Let cool and mix with the mayo and sriracha.
2. In a large bowl combine cabbage, cilantro, leeks, oil, vinegar, honey, and salt. Toss.
3. Heat a large skillet. Add ¼ inch oil to coat bottom of pan. Toss shrimp in tapioca flour. Fry each shrimp for 2 minutes on each side.  Toss with the bang bang sauce. 
4. Top the shrimp with the slaw and serve.

Can also be made as a taco. Use corn tortillas for GF option.
