Easy and Healthy Eats on a Budget

Today I conducted a lunch and learn for the staff at a low income housing complex. My agenda was to show how easy and healthy you can eat on a budget. Below are 2 meals we made and the cost associated with each. Both would feed a family of 4.

Turkey Chili

1 ¼lb lean ground turkey $3.29 1 large onion $.25 1 clove garlic $.05 1 ½ cups frozen corn kernels $.95 1 red bell pepper, chopped $.75 1 green bell pepper, chopped $.59 1 (28oz) can crushed tomatoes $1.49 1 (15oz can) black beans, rinsed $.79 1 (8oz) can tomato sauce $.25 1 package chili seasoning $.49 ½ tsp salt $.02

Cook first 3 ingredients together in a large skillet over medium heat, stirring until turkey is no longer pink. Drain. Spoon mixture into a slowcooker. Add the rest of the ingredients. Cook on HIGH 4 hours or LOW 6-8 hours.

Total cost of meal, $8.92. I purchased all the ingredients at Aldi. I bought organic when I was given a choice. I would always double the recipe and freeze what you don’t use for another meal when time is a factor.

Chicken Quesadillas

Tortillas $.85 1 lb chicken (antibiotic free) cooked & shredded $4.49 1 (8oz block) cheddar cheese $1.89

1 jar organic salsa (optional) $1.89

Total cost of meal, $7.23. With salsa $9.12
